Homemade chicken “nuggets” (with panko), and a veggie medley blend of snow peas, red potato, and red pepper. Drizzled with what has instantly become my new favorite thing: hot pepper raspberry chipotle sauce. 

Ace in the hole.

Finally, a long overdue entry for my ongoing “looks like ass, tastes like win” cookbook. Last night I was all like, “I’m gonna make some turkey meatballs.” So I made some.
A problem soon arose: I must have added a disproportionate amount of panko or something, because they weren’t cooking right on the skillet. I got frustrated and broke it up into little crumbles. Then I decided to sautée it with garlic, mushroom, spinach & diced onion. Finally, I mixed it in with some rice that I boiled while all my stuff sautéed together.
The rice does make it a little carb-happy, but this is all kinds of delicious, comforting, and not scary high in calories.

Tonight on the menu we have a Swai fish filet served on a bed on caramelized Brussels sprouts alongside some corn that I seasoned with salt and a little lemon pepper.

Dinner tonight is tortellini soup topped with skim mozzarella and caramelized onions (addicted. I put caramelized onions on everything). 

Served with a poblano chicken sausage link and a salad tossed with cukes, avocado, and lite honey dijon dressing.

On the menu tonight: spaghetti squash and lean turkey meatballs in a “cream” sauce made with laughing cow cheese and nonfat milk, zucchini and mushrooms.

Made a salad with cukes, red bell pepper, and a little pepper jack cheese. Topped with sautéed mushroom and onion and coconut chicken tenders made with panko (thanks, pinterest). 

Refreshing, light (but filling), and most of all deeelicious.

The first back-to-healthy meal: lean turkey/ground beef burgers topped with caramelized onions and mushrooms with mashed roasted garlic. Served with a roasted mix of sweet potato, broccoli, cauliflower, and brussels sprouts.
